Homemade Is Better, sometimes

Happy Wednesday! Hope you all are doing good this week.


Wanted to give a life update. All is well and I am truly loving the place I am in. This season of my life, even though very different then I imagined; is best yet.


Billy had a heart ablation procedure last Thursday. Yes, the day after Valentines Day. Billy had the best doctor along with his team of nurses and physicians. UNC Rex Heart is wonderful! Billy was discharged the next day. We went home long enough to unpack, grab a shower, repack and head to our place at the lake.


Saturday was his daughter Kelly's birthday. So we got to celebrate her this weekend with her favorite dinner....MEXICAN! And of course cake!


Then we just laid around Sunday, Billy went back to work. Light duty of course. It is amazing what we put our bodies through and what is is capable of handling.


Last night I made chicken casserole. Well, my spin on it anyway. I haven't cooked in a week and I wanted to make Billy a good meal. Eating out is convenient sometimes, but then there times I just want something at home. And, usually I always have left overs. It's hard to cook for two people. If anyone has tried the Hello Fresh or any of those delivery services let me know what you think.


I used boneless chicken breast and cut them in half, horizontal. Seasoned the breast with Carl & C'hell's seasoning. Seared them in a seasoned iron skillet . Prepared jasmine rice according to package but instead of water I use chicken broth, but just under down. I used a can of Campbell's cream of chicken & mushroom soup mixed with a can of chicken broth. Transferred rice to greased casserole dish. Arranged chicken breast on rice and poured soup over chicken and rice. Topped with cheese. Covered with foil and baked for 30 mins at 375.


So so good!

I served French style green beans as a side. Of course we had left overs and Billy said that was definitely a meal to fixed again!
